Vegetable Pulao Recipe
Description Pulao is generally made by stirring 'rice and meat' or 'rice and vegetables' before cooking it. While cooking Biryani involves clustering 'meat and rice' or 'vegetables and rice'. #Â 3 cups of basmati rice, boiled
#Â Fresh chopped coriander leaves.
#Â 3 green chillies
#Â 2 tsp of shredded coconut
#Â 3 medium onions finely sliced
#Â 1/2 an chopped onion
#Â Few sticks of cinammon, few cardommom seeds and few cloves
#Â 1 1/2 tsp red chilli powder.
#Â Add salt to taste.
#Â 2 flakes garlic.
#Â 1 inch fresh ginger.
#Â Ghee or melted butter for frying. Don't use oil as you will not get the same aroma and flavour
#Â 1 cup of cauliflower flowerets
#Â Some mixed frozen vegetables like broccoli, carrots and green peas
#Â 3 tbsp ghee (clarified butter)
Try and use fresh ingredients wherever possible.

Methods/steps
- Grind together 1/2 onion, garlic, ginger and coriander in the blender, to make a smooth paste.
- Keep aside to be used later.
- Next fry the onions in ghee or melted butter.
- Add the cloves, cinnamon and cardommom to the onions.
- When onions are lightly brown, add the red chilli powder and again fry for 30-45 seconds.
- Then add all the vegetables, including the cauliflower and frozen vegetables.
- Next sprinkle some water on it.
- Keep the mixture covered and cook on a low flame till the vegetables are cooked.
- This could take upto 15-20 minutes.
- When the vegetables are done, transfer the vegeables to a big mixing dish.
- Add all the boiled rice, salt to taste and the blended masala to the mixing dish.
- Mix thoroughly and then heat it on low heat on the cooking range.
Additional Tips
Pulao goes best with raita. Would definitely recommend making some cool coriander and mint yogurt or raita. You can even make lassi or chaas - yogurt drink to calm those taste buds.
