Spinach Curry
Description
Spinach Curry with Dal is one of my favourite curry dishes. It is tasty and healthy with lots of iron and protein. The Spinach Curry Recipe is actually my aunt's who has kindly allowed me to put it on my Website.

* 4 cups Chopped Spinach
* 1/2 cup Moong dal
* 1/2 cup Chopped Onion
* 1 Tomato
* 1 tbsp Vegetable Oil
* 2-3 Dried Red Chillies
* 1 tsp Mustard seeds
* 1 tsp Urad Dal
* 1 tsp Cumin Seeds
* 1 tbsp Garam Masala (optional)
* Salt to taste
* 1/2 cup Moong dal
* 1/2 cup Chopped Onion
* 1 Tomato
* 1 tbsp Vegetable Oil
* 2-3 Dried Red Chillies
* 1 tsp Mustard seeds
* 1 tsp Urad Dal
* 1 tsp Cumin Seeds
* 1 tbsp Garam Masala (optional)
* Salt to taste
Methods/steps
- Boil 2 cups of water and add the chopped Spinach.
- Let it cook for 5 to 10 minutes till it becomes soft.
- Cook the moong dal or microwave it for 10 minutes. It should be mashed.
- Heat the oil in a deep bottomed pan.
- Add mustard seeds followed by cumin seeds, urad dal and red chillies.
- Once the mustard seeds splutter, add onion and fry till it becomes golden brown.
- Now add the tomatoes and fry till it gets mashed.
- Add the spinach and mix them them well. Cook for 3 minutes.
- If you want it more spicy then add the Garam Masala, mix it well and leave it for 2 more minutes.
- Add the moong dal to the above mixture and combine well.
- Cook for further 5 minutes. Keep on stirring till you get the desired consistency.
Additional Tips
Spinach Curry goes really well with boiled rice and chapati or roti. You can also have some raita as a side dish to cool down those taste buds.
