Description Raita also sometimes referred to as Raitha is yogurt based dish and eated as a sauce or dip. The raita recipe described below is a very popular side dish that goes well with hot and spicy indian food. It uses coriander, mint and green chillies (optional) to give it a fresh taste. *  250ml natural yoghurt
*  ½ cucumber, can be grated or finely chopped
*  handful Mint leaves, washed and finely chopped
*  pinch of salt (add as required)
*  ½ green chilli, de-seeded and finely chopped (this is optional optional)

*  Coriander to garnish the raita.

Methods/steps
  1. Mix all ingredients together.
  2. If you are grating the cucumber then squeeze some of the juice before adding it to the yogurt.
  3. Serve as chilled dip or sauce.
  4. Add few coriander leaves for garnishing.
  5. Coriander and mint raita can be served with any tikka dish or poppadoms.
  6. It even goes well with nachos :-)
Additional Tips

You can create your own raita recipe by adding vegetables such as carrot, onions and sometimes garlic. A popular variety of raitha of northern India is Boondi raitha.

Yoghurt helps to cool down the irritant effect of some hot Indian spices. Raita or raitha is made with fresh yogurt and that means it contains the ‘good’ bacteria which can help with the digestion process.
