#Â Â 4 egg whites
#Â Â 1 cup finely chopped mushrooms
#Â Â 1/2 cup bean sprouts, chopped
#Â Â 1/2 cup diced snow peas
#Â Â 1/3 cup shredded carrot
#Â Â 1 spring onion thinly sliced
#Â Â 1/2 tsp minced fresh ginger
#Â Â 1/4 tsp ground black pepper
#Â Â oil for frying
#Â Â salt to taste
Methods/steps
- In a medium bowl, beat the egg whites with a fork until frothy.
- Add the mushrooms, sprouts, peas, carrots, spring onion, ginger, and pepper.
- Add salt to taste. Less is better
- Add a teaspoon on oil in a non-stick pan.
- Drop small rounded tablespoons of the mixture into the pan and cook until browned underneath.
- Flip and cook just until set.

- Avoid using cheese in your healthy omelette recipe.
- Use vegetable oil for frying not butter.
