Handvo Recipe
Ingredients
- 2 cups of toovar dal and rice flour (coarse)
- 2 cups of bottle gourd grated
- 3 tbsp of ginger and green chillies paste
- 1/4th tbsp turmeric powder
- 1/4 tbsp ajwain
- 1/4 tbsp mustard seeds
- 4-5 whole red chillies
- 1/4 tbsp fenugreek seeds
- pinch of hing
- salt to taste
- 1/4 cup yoghurt
- 4-5 tbsp sugar.
- 7-8 tbsp oil
- 1/4 cup sesame seeds
Methods/steps
- In the flour
- mix in the ajwain, ginger chilli paste, turmeric, salt, yoghurt, sugar
- about 4 tbsp of oil and a little water to make a thick dough.
- Heat about a tbsp of oil for vaghar.
- Add mustard seeds,fenugreek seeds,hing, whole chillies and mix the vaghar in the dough.
- Let it stand overnight.
- Next day add the grated bottle gourd in it.
- Taste the mixture and adjust the seasoning. It should taste sweet and sour.
- Now pour the mixture onto a greased baking dish.
- Spray a generous amt of oil on the top of the mixture.
- Sprinkle the sesame seeds on top and bake in a pre heated oven for about 1/2 hour at 180deg C or till the knife, when inserted comes out clean.
- Make sure the crust is golden in colour.
- Cut into pieces in the tray itself.
- Scoop out when cool and serve witg pickle.
Additional Tips
Please note: Ready mixed Handva flour is available from most Indian Stores. This would then replace the Rice and Toovar dal flour.
