  1. 2 cups of toovar dal and rice flour (coarse)
  2. 2 cups of bottle gourd grated
  3. 3 tbsp of ginger and green chillies paste
  4. 1/4th tbsp turmeric powder
  5. 1/4 tbsp ajwain
  6. 1/4 tbsp mustard seeds
  7. 4-5 whole red chillies
  8. 1/4 tbsp fenugreek seeds
  9. pinch of hing
  10. salt to taste
  11. 1/4 cup yoghurt
  12. 4-5 tbsp sugar.
  13. 7-8 tbsp oil
  14. 1/4 cup sesame seeds
Methods/steps
  1. In the flour
  2. mix in the ajwain, ginger chilli paste, turmeric, salt, yoghurt, sugar
  3. about 4 tbsp of oil and a little water to make a thick dough.
  4. Heat about a tbsp of oil for vaghar.
  5. Add mustard seeds,fenugreek seeds,hing, whole chillies and mix the vaghar in the dough.
  6. Let it stand overnight.
  7. Next day add the grated bottle gourd in it.
  8. Taste the mixture and adjust the seasoning. It should taste sweet and sour.
  9. Now pour the mixture onto a greased baking dish.
  10. Spray a generous amt of oil on the top of the mixture.
  11. Sprinkle the sesame seeds on top and bake in a pre heated oven for about 1/2 hour at 180deg C or till the knife, when inserted comes out clean.
  12. Make sure the crust is golden in colour.
  13. Cut into pieces in the tray itself.
  14. Scoop out when cool and serve witg pickle.
Additional Tips
Please note: Ready mixed Handva flour is available from most Indian Stores. This would then replace the Rice and Toovar dal flour.
