Description

This Chicken Curry recipe is surprisingly easy to cook. It uses healthy - low fat chicken, onions, lime juice, garlic and other herbs. It's very easy to prepare without a huge list of ingredients and it's very tasty. Chicken curry recipe at its best. It is probably one of the most popular chicken curry dish that is consumed all around the world. But nothing can beat a freshly prepared chicken curry using the recipe.

# 5 chicken breast halves, skinless
# salt and pepper to taste
# 10 ml olive oil
# 1 onion, peeled and quartered
# 2g finely chopped fresh ginger root
# 2 g crushed garlic
# 5 g hot (Madras) curry powder
# 1 (15 ounce) can chopped tomatoes
# 1 can coconut milk
# 3 cloves of garlic

You can also use freshly chopped coriander to garnish the chicken curry.

Methods/steps
  1. Heat oil in a large frying pan over medium high heat, then saute chicken until browned.
  2. Remove chicken from frying pan and set aside.
  3. Fry the onions in the frying pan until lightly brown.
  4. Add the ginger and garlic and saute until fragrant, then stir in curry powder.
  5. Return chicken to the frying pan and add the canned tomatoes, coconut milk and garlic.
  6. Season with salt to taste and stir all together.
  7. Reduce heat to low and simmer for 25 minutes until chicken is tender and cooked through.
Additional Tips
Definitely this this recipe for chicken curry produces amazing results. Just get it pipping hot and serve with rotis or chapatis. Tear a piece, dunk it and savour the fresh taste of spices.
